This a dessert that is both incredibly simple and wonderfully delicious. A French classic that is perfect when you need to whip something up in a pinch. It’s only lightly sweet and can be used to showcase other fruit like cherries, pears or apricots.

Ingredients

  • ½ cup ground almonds / almond meal

  • 3 tablespoons flour (regular or GF all-purpose will both work well)

  • 1/3 cup caster sugar

  • Pinch salt

  • 3 Otaika Valley free range eggs

  • 1 Otaika Valley free range egg yolks

  • 1 cup full fat milk

  • ¼ cup cream

  • 1 teaspoon vanilla extract

  • 2 cups (roughly) berries, fresh or frozen (do not thaw) will both work

 

Directions

  1. Preheat oven to 180°C.

  2. Place the ground almonds, flour, sugar and salt in a large bowl. Whisk briefly to combine.

  3. Add the eggs, egg yolks, milk, cream and vanilla. Whisk until very smooth.

  4. Pour into a well greased 23cm round dish. I like to use a cast iron pan or heavy-bottomed pie dish.

  5. Top with the berries.

  6. Bake for 30-35 minutes until lightly golden and mostly set. A little quiver in the middle is fine.

  7. Allow to cool until just warm.

  8. Serve with cream.
