Strawberry & Ginger Gin Sour with Egg White Foam
Celebrate the silly season with this special summery cocktail, blending the natural sweetness of seasonal fresh strawberries with the zing of fresh ginger, topped with a creamy egg white foam. Cocktail
4 ripe strawberries
2 thin slices of fresh ginger
60ml (2 oz) gin
30ml (1 oz) lemon juice
30ml (1 oz) sugar syrup
1 Otaika Valley Free Range Egg white
Garnish
1 ripe strawberry
1 thin slice of fresh ginger
Freeze dried strawberry powder
INGREDIENTS
Hull the strawberries, cut into quarters and add them to your cocktail shaker along with the ginger. Use a muddler (or fork) to smash the strawberries and ginger as fine as you can to extract the juice.
Add the gin, lemon juice, sugar syrup and egg white and shake for 30 seconds.
Add a handful of ice and shake vigorously for another 30 seconds.
Strain into a coupe or small cocktail glass.
Garnish with a fresh strawberry, slice of ginger and freeze dried strawberry powder if you wish.
Chef’s tip: To make your own sugar syrup, mix ¼ cup boiling water with ¼ caster sugar and stir until the sugar dissolves. Cool and store in the fridge in an airtight jar or container for 2-3 weeks.
