Apple Fritters

Crispy on the outside, soft and fluffy on the inside, these easy apple fritters are packed with juicy Granny Smith apples and a hint of cinnamon. Tossed in cinnamon sugar while still warm, they’re a delicious treat best enjoyed straight from the pan.

  • 2 cups self-raising flour

  • 3 tablespoons sugar

  • 1 teaspoon cinnamon

  • 3 Otaika Valley Free Range Eggs, lightly beaten

  • 1 cup milk

  • 1 teaspoon vanilla extract

  • 3 large Granny Smith apples, cored and diced into 1-2 cm pieces

Cinnamon Sugar

  • ¼ cup caster sugar

  • 1 teaspoon cinnamon

INGREDIENTS

  1. Whisk together the flour, sugar and cinnamon in a large bowl. Add the eggs, milk and vanilla and stir until just combined. Fold through the diced apple.

  2. Heat 2-3 cm of neutral oil in a deep frying pan or skillet over medium heat until hot (175-180°C with a thermometer). Without a thermometer, drop a small amount of batter into the oil to test. It should sizzle immediately and bob to the surface. That's when you're ready to go. Keep an eye on how the fritters are cooking. If they're browning too quickly, turn the heat down slightly. If they're too light, increase it a little.

  3. Working in batches, use a large spoon to drop heaped spoonfuls of batter into the oil, using the back of the spoon to flatten slightly. Cook for 2-3 minutes each side until golden brown and cooked through. Transfer to a paper towel lined plate and repeat with the remaining batter.

  4. For the cinnamon sugar, mix the cinnamon and sugar together in a small bowl. Toss the warm fritters in the cinnamon sugar or sprinkle generously over the top and serve straight away.

Please note - keep finished fritters warm in the oven at 100°C while you cook the remaining batches.
