Brekkie Burger with cheesy chive scrambled eggs, crispy bacon, chipotle ketchup & brioche bun.

Ingredients

  • 6 Otaika Valley Free Range Eggs

  • 3 brioche buns

  • 6 rashers streaky bacon 

  • 1/4 cup tomato sauce 

  • 3 tablespoons chipotle sauce 

  • 2 tablespoons chives - finely sliced 

  • 100g Parmesan cheese - grated 

  • Rocket 

  • Butter 

Directions 

  1. Place a pan over a medium heat with a knob of butter. Once butter has melted slice the brioche buns and add to the pan face down. Toast until golden brown then set aside. 

  2. Place a pan over a medium heat with a drizzle of olive oil. Add the streaky bacon and cook until crispy then set aside. 

  3. Grab a large bowl and add the Otaika Valley Free Range Eggs. Whisk then add the chives and whisk again. Place a pan over a low to medium heat with a generous amount of butter. I always use a lot when making scrambled eggs! Pour the eggs in and scramble to your ideal consistency. Add the parmesan cheese and stir through then take off the heat. 

  4. In a small bowl mix together tomato sauce and chipotle sauce. Set aside. 

  5. Let’s assemble! Add a dollop of chipotle ketchup to both sides of the toasted brioche bun. Top with rocket, crispy bacon, cheesy chive scrambled eggs then chuck the lid on top. Devour immediately!
