Baked Eggs in Bacon Bowls

  • 250g rindless middle bacon

  • 50g baby spinach leaves

  • 50g grated tasty cheese

  • 40g button mushrooms, sliced

  • 4 Otaika Valley Free Range Eggs

INGREDIENTS

  1. Preheat oven to 180°C and lightly butter a large muffin tin. Line four holes with a rasher of bacon.

  2. Line each bacon case with spinach leaves and scatter half the cheese into each. Divide the mushroom slices between each case.

  3. Break an egg into each bacon case and scatter over remaining cheese.

  4. Cover with foil and bake for 35 minutes or until eggs are just cooked and bacon is lightly golden.

  5. Leave in tins for 5 minutes to cool before removing. Serve hot or cold.
